The "Ktima Fuga" honey is a product of labour and love. Very rarely a good honey is at the same time of excellent taste and excellent quality (heather honey, for instance, is a honey of very good quality, but lacking in taste for many people). After years of experimentation (e.g., placement of the bee-hives in areas with specific blooming), we managed to have such a honey (of excellent quality and taste at the same time), of which we are proud.
Let us mention some of the most indicative "details" that, according to our opinion, the relevant literature, as well as the experience of those who have tasted the "Ktima Fuga" honey, give to our honey a superb quality and taste:
· We take out as much honey as it is enough in order: a) not to distress the bees and b) to permit them an adequacy of food, so that we can avoid external supplies (with the exception of very special cases, such as, an exceptionally harsh winter) and the bees may continue their work unhindered.
· Our hives are custom made and differ from the ordinary ones. This, on the one hand increases the work we have to do, but on the other hand, permit us to use hives that are closer to the specifications of a "home" that would be chosen by the bees themselves, in their natural condition.
· We keep a kind of bees that is also different from the ordinary ones (ours are of a more wild and aggressive kind). This increases further our work, as well as its dangers, but the result is that our bees have a greater resistance to the various diseases.

· We see that all possible diseases and afflictions are prevented, by extinguishing the conditions that might have caused them.

· We do not treat bees as objects that exist only to serve us, but as distinct, complicated organic systems with their own particular features and needs.

· We respect the existence of even the last bee, as a composite living being that dynamically interacts with the environment
· During the periods when our bee-keeping is a nomadic one, we see that our bee-hives are placed away from conventional cultivations.

· Among the rich Greek flora that is appropriate for bees, we choose the best possible areas, rich in flowers and herbs.

· We gather our honey at the most appropriate time of its ripening.

· Our honey is slightly filtered and has not undergone any thermal processing.
- Before being packed, it is stored in a cool, dry, dark place, without smells.
- We do not use preventive medicine for the diseases of the bees that may leave residues in the wax and the honey.
Absolute respect to the rules of biological bee-keeping, together with our focusing on the finest details, may increase the cost of the production, but they undoubtedly contribute to the creation of the final product we name "Ktima Fuga" honey, a product which is not only the quintessence of our labour, agony and care, but is mainly a product of our love for what we do. And this is exactly what we ourselves receive, each time we taste some of our honey.
